Equipment

Ingredients
  

The vegetable layer

  • 4 cups chopped mix vegetables – french beans, carrot, peas, sweet corn, khojat/zucchini, any available vegetable from the list
  • 1 big size onion
  • 5 cloves garlic
  • 2 pieces green chillies
  • 3 tbsp oil
  • 1 tsp red chilli powder
  • 1 tsp salt (adjust quantity as per your taste)

The potato layer

  • 3 big potatoes
  • 2 tbsp mayonnaise

white sauce

  • 2 tbsp melted ghee/butter
  • 2 tbsp maida (also called white flour/ cake flour / refined wheat flour)
  • 2 cups milk
  • 1 tsp sugar
  • ½ tsp salt
  • ¼ tsp black pepper

Toppings

  • ½ tomato sliced
  • ½ capcicum sliced
  • 1 cup grated cheese

Instructions
 

Vegetable layer

  • Chop onion and garlic finely. Chop the other vegetables finely too.
  • Heat oil in a pan. Fry Onion and garlic, till onions are translucent.
  • Add all the vegetables, salt and chilli powder. Combine well, cover and cook on low heat
  • Cook till they are tender (almost Cooked like about 80%, but not fully cooked). Add chopped chillies and remove from heat.

Mashed potato layer

  • Boil potatoes in salty water. Peel, mash, add mayonnaise,
  • combine and keep aside.

White sauce

  • Heat ghee, add maida and roast on low heat till maida changes its colour, feels lighter and leaves nice aroma.
  • Add milk at this point while continuously mixing with a whisker to avoid the formation of lumps. Bring it to a boil.
  • When the mixture starts thickening, remove it from heat. Add salt, sugar and black pepper. Mix.

To assemble

  • Divide the vegetables, the white sauce and the mashed potatoes into 2 portions. Lay in the baking tray, one portion vegetables.
  • Pour and spread the white sauce.
  • Drop some mashed potatoes all over the dish.
  • Make a thin layer of cheese over it.
  • Repeat the same order for the second layer. Top it up with tomato slices and capsicum rings.

Baking and Serving

  • Preheat the oven at 170c on a grill mode. Place the dish on the top most rack and bake for 7-19 min or till the cheese melts and gets the brown spots.
  • Serve hot with tomato ketchup and chilli sauce.

Notes

  1. You may do only one layer of each, instead of two. However, it tastes better with two layers.
  2. This dish does not need as much cheese as is needed for pizza. Little goes a long way.
